5. Fat-soluble vitamins. In anutrition study, volunteers consumed salads with and withoutavocado (a rich source of monounsaturated lipids). Blood samplesdrawn from volunteers showed a dramatic increase in beta-carotene(precursor of vitamin A found abundantly in carrots) following theconsumption of salads with avocado.
Explain why higher levels of beta-carotene would be detected inthe blood of individuals after consuming salads with avocado.
