1-2 tablespoons olive oil
1 package 10-12 count flour tortillas
1 - 28 ounce can enchilada sauce
1 – 4 ounce can chopped green chilies
1 teaspoon cumin
1/8 teaspoon ground red pepper
1 – 16 ounce can fat free refried beans
1 cup frozen corn, thawed
1 can large black olives, sliced
2 – 2 ½ cups shredded cheddar cheese or Mexican
blend
Vegetable spray or olive oil
Garnishes:
Salsa
Sour cream
Fresh cilantro
