I had a lab where we had to isolate and analyze citrus oils through a green chemistry approach to distillation (steam distillation). This experiment involved collecting distillate from orange peels. The temperature range of distillation during actual collection of distillate for the experiment was 95-99.4° C. The distillation range is lower than the boiling point of pure water. What could explain this temperature difference on a molecular level?
