Major Lab/Large Quantity Cooking: Due April 13, 2022 20% As a dietician, you are part of a team who has created a food service establishment that specializes in preparing special meals for clients who have conditions that require medical nutrition therapy. Family members of one such individual is interested in you planning a five- course meal for their relative who is receiving care for a named condition (Note: focus on the condition that you researched in this semester). The meal is for 25 family members/friends who will eat the special diet meal with their aunt. Please do the following in your assigned groups: 1. Write the descriptive menu for the five-course meal you plan to serve...three courses if preparing for a child (prepare the menu card) 2. Show reasons for selecting the dishes chosen 3. Provide the recipes for all the menu items 4. Increase the recipes for the menu items (dishes) in the main course to serve the 25 patrons 5. Prepare the shopping list for the main course items (dishes) that have been increased for the 25 patrons 6. Cost the shopping list for the major items (do not include condiments, e.g., black pepper, salt, cinnamon, etc.) 7. Calculate the portion cost for the main dish 8. Provide information on the design of the establishment making reference to the type of restaurant, organization of the facility for flow, and other pertinent information.
