The emulsion will be prepared in a high speed homogenised to an average droplet specification of 1 um. Using the molecular weights of each of the chosen emulsifiers [PEG-100 Stereate (HLB = 18.8 + 12 AND Glyceryl Stereate (HLB = 3.8 + 1)), calculate a weighted average molecular weight of the emulsifier blend and assuming that the cross-sectional area of each emulsifier molecule is 20 Å?, calculate how many grams of emulsifier blend are needed to emulsify 25 g oil (assume the density of the oil is 0.9).
