Situation You have been asked by a local homeless center to bake some bread for a holiday dinner. The center would like their dinner crowd to have some home baked goods with their meal as expression of care and kindness. The center is also concerned about the amount of sugar that may be required in the rolls since they may have diabetics attending the dinner. The director of the center asks you to make one batch of rolls using a sugar substitute. You are unsure however is this will work since yeast is required for the recipe and for the dough to rise, so you decide to experiment with a few different sugars to make sure you can provide a low sugar alternative for the diabetic dinner guests. Observation Yeast will ferment sucrose and give off CO2 gas. The CO2 gas builds up in the dough and is what makes the dough rise. The CO₂ is baked into the rolls and is what makes the rolls light and fluffy.
Hypothesis: Formulate your own hypothesis and null hypothesis regarding the use of a sugar substitute and fermentation properties of yeast. Experimental Design: Design a simple experiment to test your hypothesis. Include a positive and negative control. Define the independent and dependent variables.
