The purpose of this lab assignment is to understand how processing affects the nutrient content of foods and to compare the nutrient content of processed foods to similar whole, intact foods.
For this lab assignment please find one type of fast food menu item in Diet & Wellness Plus “track diet” database. This should be a food that you could also make a healthier version of at home using individual ingredients.
Refer to the following guidelines when answering the questions in this lab assignment.
Dietary Guidelines for Americans 2015–2020: Guidelines and Recommendations
Consult with your instructor about how to submit reports for this assignment. Please generate the following reports to answer questions for this lab assignment:
1. What fast food item did you choose from the Diet & Wellness Plus database?
2. For the fast food item that you chose, fill in the nutrition information in the following table.
3. For the fast food item you chose, list all of the ingredients you think you would need if you were to make a healthier version of that same food:
4. For Part 2 of this assignment, go back to Diet & Wellness Plus and Track Diet. Select "Recipes" from the "My Created Foods" box and "Create New Recipe." Give your recipe a name and make one portion. Add the ingredients you would need to make a healthier version of your fast food item. List the recipe ingredients that went into your recipe and the portion sizes of those ingredients in this answer.
5. After you have created your new recipe and saved it, click the "i" for information next to your recipe name to reveal the nutrition information. Enter the information from your new recipe and compare it to the fast food version of your selected food (same information you entered in the previous table question).
6. In one paragraph please explain what changes you made in your home-made version of the fast food item that made it a better-for-you option than the fast food version. Comment particularly on saturated fat and sodium and why you think these numbers may differ, if they did indeed differ.
