HACCP Exercise (20 pts) – due on 4/18/2022.
1. In this exercise, you are going to develop a
HACCP plan for preparing a dinner meal in your house.
2. List the major steps describing the process of
putting the dinner together. You can also use a
flowchart.
3. Start with the purchase of ingredients. Include
the transportation of the ingredients once purchased (in a cooler,
etc), how is the food stored once at home, what are the utensils
used in preparing the food (cutting, grinding, mixing), what are
preparation processes used in this dinner (baking, steaming,
etc), how is the food served (on plates, in serving dishes,
etc).
4. Indicate all the
CCPs (critical control points) in the process.
Hint: temperature & cleanliness are CCPs for most
food safety related processes.
5. There must be at
least 10 steps in your process.
6. Upload the word.doc or pdf to the
Assignment site by the due date.
7. 10 points will be awarded for
completeness of the steps in your list or flowchart. 10 points will
be awarded for identifying all the possible CCPS in your
process.
