When bacterial cells are grown at temperatures lower than normal, for example, at 15°C rather than at 37°C, the membrane lipids contain a larger proportion of unsat urated fatty acids than saturated fatty acids. When the tem- perature is restored to 37°C, the ratio of unsaturated fatty acids to saturated fatty acids is then observed to decrease. What is the possible significance of these observations?
