6. As ketone in its open chain form, fructose is not reducing at room temperature and pH 7. but here it is a reducing sugar as converts to glucose under the high temperature, high pH conditions of the DNS assay. Suggest a mechanism for the conversation of fructose to glucose under basic conditions. (Hint: we've seen an enzymatic version of this kind of isomerization reaction catalyzed by triose phosphate isomerase).
